Low Carb Pancakes

So my husband (Shawn) and I have decided to go low carb. This is a personal decision based on what works for us. I am in no way trying to make anyone go low carb or trying to advise you on health in this post. I’m simply just sharing a delicious recipe I thought you’d enjoy 😊

Okay so I originally found this recipe on https://www.ibreatheimhungry.com/cream-cheese-pancakes/. Hers are so much prettier than mine and she does use cinnamon and I do not. So here’s my take on the recipe..

Recipe:

2 oz Cream Cheese
2 large eggs
1-1.5 tsp artificial sweetener
1 tsp vanilla (optional)

In a blender, I use the Ninja Professional (love it!!), I put all ingredients in at once. I blend it until it’s smooth. It will have lots of bubbles so let it sit for a few minutes before pouring into your skillet.

Once your skillet is hot and the butter you used to grease the pan is melted, start pouring your pancakes like you usually would. This recipe is somewhat runny and for me they do tend to be a messier pancake but they are seriously delicious so bare with me! Flip them as you would normally, it might take a few more seconds on the the original side because they can fall apart as you flip.

Continue making the pancakes. I do tend to make smaller ones so they are easier to flip.

Once they are finished I top them with sugar free syrup. I use Maple Grove Farms Low Calorie Syrup Sugar Free Maple Flavor.

That’s it! My recipe makes a ton of pancakes and I do eat all of them unless I’m sharing with Liam. These are also good reheated so they are perfect for a busy morning.
